Black Bean Veggie Tacos

These tacos are quick, colorful and made mostly from pantry and freezer staples. Black beans simmer with sautéed bell pepper, onion and corn in a little cumin and chili powder, then get piled into warm corn tortillas. Fresh toppings like avocado, shredded cabbage and cilantro add crunch and creaminess. Set everything out and let everyone build their own.

Instructions

  1. Step 1: Heat the olive oil in a large skillet over medium heat. Add the bell pepper and red onion and cook, stirring occasionally, for 5 minutes until softened.

  2. Step 2: Stir in the garlic, cumin and chili powder and cook for 30 seconds, until fragrant.

  3. Step 3: Add the black beans, corn and water. Cook for 4 to 5 minutes, stirring and lightly mashing some of the beans with the back of a spoon, until heated through and slightly thickened. Season to taste with salt.

  4. Step 4: While the filling cooks, warm the tortillas one at a time in a dry skillet over medium-high heat for about 30 seconds per side, or wrap the stack in a damp paper towel and microwave for 30 to 45 seconds. Keep them wrapped in a clean towel so they stay soft.

  5. Step 5: Spoon the bean filling into the tortillas and top with avocado, cabbage, salsa and cilantro. Serve with lime wedges.

Tips

  • Corn tortillas are naturally gluten-free, but some brands are made with wheat flour or in shared facilities. Check the label if you need them to be gluten-free.

  • Doubling up two tortillas per taco keeps them from tearing under a generous filling.

  • Leftover filling makes a quick lunch bowl over rice or greens.

Storage

Refrigerate leftover filling within 2 hours in a covered container and eat within 3 to 4 days; reheat until steaming hot. Store toppings separately and assemble tacos just before eating.
